I tend to avoid spaghetti noodles in all 'alternative' pastas. Whether rice, cassava, legume, or whole wheat based - spaghetti noodles tend to clump and be funky if not handled with constant attention. I loved this einkorn spaghetti! I would say texture wise it is most closely similar to whole wheat; but it was toothsome and rich, not clumpy, and the perfect size noodle. I tend to eat very intuitively and I have found myself craving this pasta on the regular.
